The catwalk is where the majority of our Systems infrastructure is located. Additionally, member shelves are on the catwalk.
Please do not store items on the catwalk, except on member shelves. Loose items will be ticketed

Mark Creasy

History
Mailing List Announcement: 05/07/2019

Officially Proposed: 05/07/2019

To be voted on: 05/21/2019

Background
This vote aims to install door flaps and ceiling tiles to prevent heavy dust from settling on food surfaces, install an operational vent fan and duct work above the stove hood, and properly ventilate it to the roof using an existing 10" hole.

Floating particles of dust, wood, metal and chemicals enter the kitchen via unfinished doorways and missing ceiling tiles forming a thick layer of grime on dishes and food surfaces. By the end of each week, the grime must be cleaned before anyone uses the kitchen for practical purposes. Installing solid doors isn't a great solution since heavy member projects and carts need to travel through the doorways, so I'm proposing to purchase two sets of acrylic door flap kits with mounting hardware from AKON (est. $350), and 36sq ft of Smooth Pro Lay-In ceiling tile for the ceiling (est. $100).

Once the kitchen is a bit more sealed to immediate air, we'll need a way to ventilate the oven and electric range when in use. Joe Mertz was kind enough to install a hood over the stove, but there isn't a usable fan or duct work, and it must be connected to an existing 10" hole to the roof. As well, we'll need filters and a replacement bulb for the florescent light in the hood.

The labor ($250) and parts ($750) involved in duct work, fan, switch, and roof connection should total $1,000.

This should make the kitchen a more finished, approachable, and usable area.

Vote Language
Authorize $1450 for the purchase of two flexible acrylic flap doors for the kitchen, along with the installation of stove top ventilation fan connected to the building's roof.

Getting authorized on tools can be tough. Sometimes it's hard for new members to figure out how to get authorized, sometimes classes fill up in hours, sometimes classes aren't scheduled regularly. We want to fix that. The Board has created the following Volunteer Positions. We need a few members to step up and offer their time to get people authorized.

Responsibilities and Incentives
*Each Authorizer will be required to hold regularly scheduled office hours (the Board is recommending two, two hour sessions each month as a good starting place) to offer authorizations, assistance with tools, or anything else in their assigned areas.
*Authorizers will receive either a free Starving Hacker membership or $40/month off of a full membership.
* Onboarding Process: https://docs.google.com/document/d/1RB93_jgWFYBgU0DciqbfFnXY4hnfzHo02OD_2ViPHnM/edit#

Area Host Expectations
The organization critically depends on our area hosts and the quality of your service is a major factor in the experience of our members and the overall atmosphere of the space. The following are the duties and expectations of your area host position:

In general
* You are an ambassador of the space. We expect you to make yourself familiar with and abide by our policies and to hold yourself to the highest standards of being excellent to others. Your behavior sets an example for the entire membership.
* Explain and lead TidySpace policy for your area.
* Prior to authorizing anyone on any equipment, ask about membership, ID check by two board members and liability waiver. Do not authorize anyone who hasn’t completed all three.
* Do not give the door code to anyone. Members get the door code when the membership process is completed.
* If you authorize a non-member to use tools per section (i) of https://wiki.pumpingstationone.org/Authorization_Policy that person must fill out a volunteer agreement form. The form must be signed by you as well as the non-member. This form must be sent to info@pumpingstationone.org prior to any non-member tool use. (This is for insurance reasons. A link to this form will be provided when it is complete.)

For the area
* Post contact information for yourself and the area volunteers.
* Set rules and authorization processes and document them on the area wiki page.
* Establish a TidySpace Wut Zone for your area
* Provide TidySpace parking tickets (yellow, red and green)
* Post the rules or a link to the rules or a link to the rules in the area. They should include the following:
** Safety rules.
** How and where for material and project storage.

Duties
* Ensure a clean and safe workspace.
* Expedite tool maintenance and repair when necessary.
* Facilitate the authorization process, working closely with volunteer authorizers.
* Label, document and organize tools and available equipment.
* Report area needs and concerns to the board.
* Post all receipts to info@pumpingstationone.org within 30 days.
* Maintain an up to date record of area spending.
* Keep the area wiki page up to date.

What you can expect from the board
* We will take your concerns seriously and will work with you to try and resolve them.
* We will consider creating a temporary replacement position if you need to be absent for an extended period of time.
* We will work with you to make sure you have the volunteer authorizer help the area needs.
* We will seek your input when we are considering making changes to volunteer authorizer positions in your area.
* We will strive to promptly process reimbursements and refilling of Pex cards upon receiving proper documentation.

Superchomp: /* Voting */

Voting
Pumping Station: One is a member-run organization, driven by membership vote. Currently there are two tiers of membership: Full Members and Starving Hackers. This is somewhat of a legacy of other hackerspaces and an attempt by PS1 to follow certain Hackerspace Design Patterns and to accommdate those without the financial means to pay the Full rate.

Voting is a process established in the Bylaws and promulgated by the Board of Directors. As of January 22, 2019, all members may write a proposal for a vote, and so long as it is possible to vote it "up or down" ... it must be phrased so that a voter can vote for, against or abstain; it cannot be essay format or multiple choice or anything other than yes or no, it may be considered for voting by the Full Member membership.

The vote language is, by custom, circulated well before the vote for community review, generally by posting on the PS1 wiki, and for commentary, support, dissent, editing and for other sponsors to attach themselves to the vote.

Once the vote language has been refined and either a consensus has been achieved (de facto) or the sponsors decide simply that they wish to freeze the vote language and put the matter before the Membership, the language is locked and the vote is displayed on the PS1 wiki for review. After some time has passed, but at least 5 or 7 days (please help me clarify the specifics) the vote date is announced, by the Secretary, and an email is sent to each member. The email can serve as a proxy vote by filling it out according to the instructions in it, and returning it to the email address it was sent from.

An official Member Meeting must be announced for a vote. At the Member Meeting, the Secretary takes attendance, and the vote is conducted. The Secretary, after counting the votes and adding the Members who have voted by proxy, announces if quorum has been men, and if it has, the outcome of the vote. The results are binding on the organization and the Board of Directors is obligated to carry out whatever elements of the vote require their action, including but not limited to writing checks or making other payments.

Superchomp: /* French macaron and buttercream recipe */

French macaron and buttercream recipe
French macarons with lavender buttercream

Pre-heat oven to 290F. Cut parchment paper to a tray, and stack that in another tray. The double method prevents them from cracking / rising too quickly. Cut another parchment sheet and leave out separately- we'll use the same two trays for the second batch.

Sift these two together, removing any large bits.
138 g almond flour
124 g powdered sugar
Set that aside.

Whip this at room temperature in a mixer until it begins to foam: 105 g egg whites
Slowly add this a teaspoon at a time
105 g granulated sugar
Stop the mixer when it's stiff and white- if you pull out the whisk and it has a "space needle peak" / pompadour, you're good. Don't overwhip to total stiffness. This is where you would add a drop or two of food color gel like Americolor, but we didn't have any. Whip again real quick to incorporate color.

Pull off the meringue bowl and add in 1/3 of your powdered sugar / almond mix. Slowly mix until just incorporating all the dry stuff. Repeat two more times.

The tricky part is- whip this mixture until it you can raise the spoon and it starts to slide off quickly. It has to flow like lava. You're eliminating air that will otherwise result in hollow shells.

Add that blended almond/meringue dough to a freezer bag and cut off the corner, or pastry bag with a 1/4" tip if you can find one.

Pipe circles onto the parchment paper. Ours made 24 rounds 1.5" apart from each other in a matrix.

These don't need to sit out and "cure", but slam the tray down a couple times so that they even out into circular blobs and all the bubbles come to the surface.

Stick into preheated oven 290°F for 18 minutes

Don't open the oven to check on them until then.

If they have formed "feet" / a pedastal around the bottom, hooray! Let this tray cool for 5 min then pull the parchment onto a cooling rack. Gently put your second sheet of liquid round shells on the double pan (that has now also cooled somewhat) and stick that back in the oven for another 18min.

Buttercream: Clean all your mixer components and get them ready for buttercream. 1 stick of room temperature butter, whip it 1 cup of powdered sugar, mix incorporate that We used a squirt of honey A squirt of lavender paste A dash of rose water Whip fast until all incorporated, adjust sugar or butter if you need more. Again- we didn't have any food coloring but if you do, now's the time to drop in and incorporate with a whip or two. Scoop all of this into all to pastry bag or freezer bag- if pastry bag (we have a small one now with star shape), use a star shape to give texture to the sides.

Remove your shells from the parchment paper once cooled, they should pop off somewhat easily.

Turn them upside down and compare which ones are equally sized, you'll be sandwiching them together.

Pipe half of them with star shapes that you'll eventually squish onto the other sides. If you are alternating colors with your buttercream, this is a good time to do like, blue, red, blue, red, blue.

For a chocolate rye whiskey variation: When making the shells, add 1 tbsp of 100% cacao powder (like Hershey's Dark or Dutch pressed cocoa powder) to the almond flour / confectioner sugar mixture and whisk in. For the filling / buttercream: Over medium heat, pour in 2oz of rye whiskey and 1tbsp of carraway seeds When it's simmering / cooking off the alcohol, whisk in 1/3 cup water and 1/3 cup sugar. Over medium heat, whisk occasionally and reduce the water down. Mix in 2tbsp cocoa powder, do not overheat. Keep mixing until it's the consistency you want. Add 1 tsp vanilla. When you're happy with the chocolate rye carraway mixture, let it come to room temperature. Add as much to a room temperature buttercream as you'd like (Start with a room temperature stick of butter, whip it, add up to 1c powdered sugar gradually).

138 g almond flour 124 g powdered sugar Set that aside.

Whip this at room temperature in a mixer until it begins to foam: 105 g egg whites (not aged) Slowly add this a teaspoon at a time 105 g granulated sugar Stop the mixer when it's stiff and white- if you pull out the whisk and it has a "space needle peak" / pompadour, you're good.

The Kitchen is one of the areas that has an area host here at PS:One. The current Area Host is Gerald Gayares. The kitchen aka:Pumping Station: Yum was built out of necessity to have a place to cook and started out by having a hot plate, a broken microwave and a broken refrigerator at a corner of the workshop. Additionally we built a place to ferment beer in the SW corner of the kitchen that can hold up to 12Kegs and thus was born Beer Church. The kitchen is enclosed by steel stud partition walls on the North and East sides and structural CMU walls on the South and West.
Storage
How to store:
Make sure you properly store your items, we have resealable bags in the drawers, we have some containers as well.

Meats and produce. If you are going to store any kind of meat or produce for a long period of time we highly recommend putting it in freezer side.

Label whatever you put in the fridge, below is some info that is useful:

Your name/ Who can we contact contact

What it’' is / No matter how obvious

Date/ Your items will be thrown out after a week of the expiration date or if there is no expiration
date it will be thrown out exactly one week after it was put there.

Drinks

Drinks that perish and smell bad will be tossed out.
Storing beer is ok just as long as it doesn't take up too much space for a long time.

If you would like to share fridge food with the space label the name as PS:One
If you find something on this page that seems inaccurate, Please contact the affected member or the General Area Host. Please do not edit other members' entries.

You should use the same name here that you have listed on the members site so that we can verify your membership status. This will help you avoid your storage space getting ticketed and you having to do something about it later.
Catwalk Shelf Registry
The catwalk is where the majority of our Systems infrastructure is located. Additionally, member shelves are on the catwalk.

Please do not store items on the catwalk, except on member shelves. Loose items will be ticketed

On the catwalk, numbering starts with the upper left shelf and goes down, then across. The top row is ignored because the opening is too obstructed to be used.
